It's no surprise that when I travel, I want to taste as many vegan treats as possible. Josh and I recently had a 7-hour layover in Vegas and decided it was time for some tacos. We had spent several days in Europe and missed San Diego's glorious street tacos. After some brief research (me typing in "vegan tacos" on yelp) we decided to give Pancho's Vegan Tacos a try. We tried what felt like just about everything on the menu below you will find some of our favorites. First up, the tacos.
We tried the: asada, al pastor, chorizo, and chik-end. My husband's favorite was the asada. Mine was the al pastor because it had a sweet and spicy taste. Like traditional street tacos, each taco came with onion, cilantro, and lime. Squeezing them lime over the tacos is a must ladies and gentleman. Adding the lime makes all the flavors come to life. The tacos are relatively small so be prepared to order more than one. They are well worth it.
Nacho Cheese Nachos
Sometimes when I want nachos I do not want a heaping pile of meat, cheese, sour cream, salsa, onions... I just want cheese, meat, and jalapenos. That's exactly what I got! The nachos reminded me of the nachos they serve at high school sporting events. The flavors weren't overpowering. They were simple. For me, the nachos were quite nostalgic. The cheese did get cold quickly. My guess is because the consistency of the cheese is fairly thin. So if you are going to order them, eat them quickly.
I have yet to find a vegan quesadilla that completely satisfies me. I will say this one came close. For me, the texture of the cheese was too creamy. When it comes to food texture can throw me off very quickly. So while the taste and flavors were appealing, I wasn't able to finish the entire quesadilla because I couldn't tolerate the texture of the cheese.
Potato Rolled Tacos w/ Rice and Beans
I do believe the potato rolled tacos reminded me more of flautas than rolled tacos and they were by far my most favorite item off the menu. They had the perfect potato to tortilla ratio and were perfectly crispy. They had the right amount of sour cream, lettuce, and pico on top. If you've ever eaten at a taco shop and felt like they put an entire head of iceberg lettuce on top of your rolled tacos you understand why this is important. Pancho's Vegan Tacos got it right. The rice was phenomenal as well. It was fluffy and well seasoned.
