DIY Holiday Mason Gift Jars

DIY Holiday Mason Gift Jars

Both these recipes are modified versions of Tia Mowry's holiday recipes. I took the liberty of making the brownie recipe vegan-friendly since we don't consume animal products in our household. Josh LOVED these brownies by the way! However, I recognize my family members still incorporate eggs into their diets so the pancake recipe does include eggs. Enjoy!

Peppermint Brownie Gift Jar

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon kosher salt

1/2 cup unsweetened cocoa powder

1 cup granulated sugar

1/2 cup bittersweet chocolate chips

1/2 cup crushed chocolate peppermint candies (Not a peppermint person? Use marshmallows instead!)

1/2 cup unsweetened applesauce

1 stick vegan butter

1 teaspoon vanilla extract

Pour flour, baking powder, and salt into a mason jar. Whisk with a fork. With a spoon, gently add a layer of cocoa powder, then sugar. Make sure each ingredient is not mixing with the others. Top with chocolate chips, then chocolate peppermint candies. You want to see the separation of each ingredient in the jar.

Preheat oven to 350.

Line an 8 x 8 baking dish with parchment paper, so it overhangs over 2 sides. Spray with cooking spray.

In a bowl add melted butter (1 stick). Whisk in 2 eggs and 1 tsp vanilla extract until well blended. Pour entire contents of jar into butter mixture. Stir together until combined.

Bake for 30 to 35 minutes, until a toothpick comes out clean. Remove from oven and allow to cool. Lift the parchment paper out and cut brownies. Store in an airtight container at room temperature for up to 7 days.

Apple Spiced Pancake Gift Jar

3 cups all-purpose flour

4 tablespoons sugar

6 teaspoons baking powder

1 teaspoon kosher salt

3 teaspoons ground cinnamon

1/2 teaspoons ground ginger

1/2 teaspoons ground nutmeg

1/4 teaspoons ground allspice

1/4 teaspoons ground cloves

2 eggs

1 1/2 cup almond milk

1 cup applesauce

4 tablespoons vegetable oil

Mix together all dry ingredients in a large bowl. With a spoon fill a mason jar with dry ingredients.

Preheat oven to 200.

In a large bowl, mix together all wet ingredients. Add entire contents of mason jar pancake mix. Gently stir until combined, do not over mix. Batter will be lumpy. If batter is too thick add 2 tablespoons of milk at a time.

In a large skillet on medium high heat, add ½ teaspoon butter. Swirl to coat the pan. Add ¼ cup of batter to pan.  Repeat with another ¼ cup. Heat until bubbles come up to the top, about 1 to 2 minutes. Flip and cook other side for another 1 to 2 minutes. Don’t flip again! Remove to a sheet tray and keep warm in the oven.
